Limestone is used to purify the sugar beet juice that leaches from sugar beets. The lime is burnt and slaked by adding water before it is mixed with the sugar beet juice. The lime is then eliminated from the plant nutrients and organic material from the beets. The beet juice is then filtered to produce the sugar.
